SERVES: 1-2 : PREP time: 5 min
- 3 c Spinach (chopped)
- 2 c Purple cabbage (shredded)
- 1 c Cucumber (sliced)
- 1/2 White onion (sliced)
- 1 c Button mushrooms (sliced)
- 1 tsp Onion powder
- 1 tsp Garlic powder
- 1 tbsp olive oil
- 1 tbsp Apple cider vinegar
- Sea salt and fresh cracked pepper (to taste)
- Chop spinach, cabbage, cucumber, onion, and mushrooms.
- Toss into a large salad bowl.
- Sprinkle salad with onion powder and garlic powder, salt and pepper, vinegar and oil.
- Toss thoroughly and gently.
